Olive and Pancetta Loaf

Ok, it's been a while since I've posted anything. Summer is a busy time...cycling, work, and general tiredness has slowed the cooking a bit (it's not fun in the kitchen in 30'C temperatures), but I have been baking, so time for a bit of a catchup.

I won't be posting the full recipes for the next few will be photos and ingredient lists only. Maybe a bit of theory.

First up is one of a series of filled loaves I did, using olives and cubed pancetta.

  • 500g strong white flour
  • 30g olive oil
  • 10g salt
  • 7g fast action yeast


  • 100g olives
  • 100g cubed pancetta
